That salad looks good. I have started making a chopped kale salad everyday for lunch. You can buy huge bags of it prewashed in the market. I take a handful and chop it up into a salad. iIs major high in protein too. I also like the texture.

Chickpeas have always been my favorite though. Since I was a child and it was something served at my grandfather's shul for kabalat shabbat. 😊

I love kale too. I've been eating it raw way before it became cool whenever that was. I used to eat a salad every day of kale, peppers, plain yogurt or plain Greek yogurt, tomatoes and salsa. We called it my "single girl salad" because when my former partner moved in he started to pack me a more complicated salad. Now I frequently put my Israeli salad on a bed of chopped kale. It is nice how easy it is to buy it pre-washed. I also get delicious varieties at the farmers' market near me.

That’s what I do with the kale. Make myself a chopped Israeli salad too. Hah, great minds think alike!

If we all got together for a potluck, we'd have to make sure we didn't all show up with the same dish!

You can try adding in some lupin flour, which has double the protein content. Taste and texture are other matters.

Yes! This is a great idea. I eat chickpeas for dinner a couple of times a week; always add cheese, or an occasional egg for extra protein. I have to watch my carbs, so I can't eat a whole can...
